Stuffed Bell Peppers

Ingredients
1/2 lb. Ground Turkey Breast
1/4 c. oatmeal (ground in blender or food processor)
1 - 8 oz. Cans no salt tomato sauce
1 egg white
1 tsp. Onion powder
1 tsp. Garlic powder
3 tsp. Chili powder
4 green bell peppers (cored and seeded)
1 c. cooked brown rice (cooled)
Preheat oven to 350.
Core bell peppers from the top. Clean out seeds. In mixing bowl, with
ground turkey breast, add 1/2 of tomato sauce, 2 tsp. Chili powder, ground
oatmeal seasonings and rice. Mix well. Scoop into bell peppers. Spoon
remaining sauce over top of stuffed peppers. Sprinkle with remaining Chili
powder. Put peppers in small baking dish with 1/2 cup water in bottom of
dish. Cover with foil and bake at 350 for 40-50 minutes depending on size
of peppers.
2-3 servings depending on portion allowances. Freezes well.
