Mom's Chicken with
Sun-Dried Tomatoes

Ingredients
4 Boneless Skinless Chicken Breast halves
1 cup sun-dried tomatoes chopped (not in oil - dry package)
1 cup boiling water
4 Tbls fat free cream cheese
1 cup fat free plain yogurt
2 teaspoons dried basil

Preheat oven to 350.

Soak sun-dried tomatoes in boiling hot water for one hour. Drain. I do this the night before so it's done when I get home. Pound chicken breasts with rolling pin until kind of flat. Place 1 Tbls Cream cheese and 1 Tbls sun-dried tomatoes at edge of each breast. Roll chicken up and secure with a toothpick or tie with string. Place in a baking dish coated with non-stick cooking spray. Cover and bake at 350 for 40 minutes. Mix yogurt, remaining tomatoes and basil in blender or food processor till well blended. Warm sauce over low heat. After chicken is done, place each breast over a portion of brown rice and pour 1/4 of sauce over each portion. Serve with salad or steamed vegetables.
4 servings.
