Mom's Meatloaf and
Mashed Potatoes

Meatloaf

Ingredients
1/2 lb. 7% or less fat Ground Meat
1/2 lb. Ground turkey breast
1/4 cup ground oatmeal
1/4 cup diced bell pepper
1/4 cup diced onion
1/2 tsp. Salt
1/4 tsp. Pepper
2 egg whites (or 1/4 c. egg substitute)
1-8 oz can no salt tomato sauce

Preheat oven to 350.
In large mixing bowl, combine all ingredients well. Place in small loaf pan. Cover and bake at 350 for 45 minutes. Remove covering and add ketchup to the top if you want. (My husband loves this and I don't so I only do half the loaf.) Bake 15 min. uncovered. Serve in portion sizes with mashed potatoes (recipe follows) and fat free brown gravy.
Serves 4-6

Mashed Potatoes

Ingredients
4 med. To large potatoes
2 cloves garlic
1/2 cup fat free plain yogurt
salt and pepper to taste.

Wash and scrub potatoes (I never peel my potatoes because I like the skins and their good for you) and slice 1/4 to 1/2 inch thick. In large saucepan, cover potatoes with water, add garlic cloves and boil until potatoes are fork tender. In bowl, mash potatoes and garlic and add yogurt and seasonings. Whip with hand mixer till well mixed and not too lumpy. (I promise you will never use butter in mashed potatoes again.) These are very yummy. If your kids won't eat them with skins, peel them.
Serves 4-6
