SPICY
BREAKFAST QUICHE

& Ultra Low fat Recipes
Ingredients
2 - 8 oz.
Cartons of Eggbeaters
1 - 4 oz can chopped green chilies
½ cup low-fat cottage cheese
6 Tbls fat free sour cream or fat free yogurt
1 cup fat free cheddar cheese, grated
4 Tbls flour (whole wheat works okay)
¼ cup chopped onion (red or white)
Preheat oven to 350?.
Blend Eggbeaters, cottage cheese, sour cream (or yogurt), and flour in
blender or food processor. Mix till the lumps are gone. Pour into large
bowl, add remaining ingredients and stir. Pour into 9” pie plate sprayed
with non-stick cooking spray. Bake at 350? for 50 minutes.
Serves 4-6 portions depending on the individual. This freezes well for
future meals if you are cooking for only one or two people.
